How do you like your Cabernet? Fruity? Austere? Cabernet Sauvignon is a grape that has a remarkably consistent expression of its typical structure and flavors. One big factor that creates variation is the ripeness of the grapes. Under-ripe grapes create a more vegetal wine- this can be from being picked early, or a very cool growing climate. Likewise, wines associated with medium/cool climates often have aromas of eucalyptus and mint. In hot climes, jammy is the word.
